When we go to Mexico to visit my family, we like to go to this restaurant in Ensenada near the sea called “Los Veleros” where they offer you as a compliment a sopa de chicharron or a quesadilla, I always go for the soup as it is packed full of flavour.
So yesterday after deciding to make enchiladas verdes for our dinner, I went to the supermarket to get some chicken, while I was queuing to pay something that looked like a bag of crisps got my attention, it said Pork Crackling, so I bought it, took it home, tried and yes! You guessed, it tasted similar to the chicharron we have in Mexico.
I thought to recreate the soup we get in “Los Veleros” to use my salsa verde. I have to be honest, it doesn’t have the same texture and flavour, but it tastes very similar, so you ever do a Mexican dinner party and want to impress your guests with a starter, this is a good option. When you serve the soup you garnish it with chopped onion, coriander and avocado and then the dish comes together.

Ingredients
- 4 bags “Hogbites” hand cooked pork crackling
- Tomatillo Sauce (recipe on the blog)
- Water
To garnish
- Chopped onion
- Chopped coriander
- Chopped or sliced avocado
Method
In a casserole dish pour some salsa and water to boil enough to get a soup consistency, add the pork cracklings and cook for 10 min. No need to use salt as the pork cracklings are already salted.
Serve in a small bowl, garnish with onion, coriander and avocado.
