In my family we have some dishes that we call emergency dishes, dishes that my parents used to cook when they didn’t have time or money and this is the case of this soup as the ingredients are very basic and cheap, but the result is a soup pack with tons of nice flavour. Feel free to add more ingredients if you want t make it even nicer, but in this occasion I will tell you the way my dad used to make it.

Ingredients
- 2 organic large potatoes cut in chunks or a 500 gr baby potatoes peeled and cut in chunks
- 1 organic tin chopped tomatoes
- 1 organic vegetable or chicken stock cube
- 1 small chopped onion finely
- 1 clove garlic peeled
- 1 tablespoon rapeseed oil
To garnish (optional)
- 200 gr cheddar cheese cut in cubes or
- Chopped avocado
- Sour cream
- Chopped coriander
Method
Blend the chopped tin tomatoes with half an onion until getting a smooth consistency.
Heat a sauce pan at medium heat and add the oil, rest of onion and garlic, fry for 5 min and add tomato purée, cook for 5 min.
Disolved the stock cube in hot water and add it to the tomato purée, add the potatoes and cook for 10 min or until the potatoes are tender. Check the salt before turn the heating off, if it needs more salt, add it and continue cooking for 3 more min.
Serve with cheddar cheese cubes or avocado or any other garnish mentioned here.
